Thai soup with sweet potatoes

Ingredients for 4 servings:

  • 750 g sweet potatoes
  • 1 onion(s)
  • 2 tbsp red curry paste
  • 2 stalks of lemongrass
  • 500 ml soy milk (soy drink)
  • 400 ml coconut milk
  • 1 tsp lemon juice
  • oil
  • Salt
  • n. B. Sambal Oelek

Working time approx. 15 minutes; Total time approx. 15 minutes

very creamy and a bit spicy

Peel and dice the sweet potatoes, and cook until soft. Dice the onion, smash the lemongrass with the back of a knife, and cut it into 2-3 pieces so it can be removed from the soup at the end. Heat the oil in a pan and sauté the onions, lemongrass, and curry paste. Add the cooked potatoes. Pour in the lemon juice, soy milk, and coconut milk, and blend. Finally, season with salt and sambal oelek.
