Ingredients for 1 servings:

  • 2 egg whites
  • 65 g fructose
  • ½ tsp cinnamon or more if needed
  • 130 g desiccated coconut
  • wafers

Christmas cookies – low in calories but still delicious

Beat egg whites until stiff peaks form. Gradually add fructose and cinnamon and stir in. Then carefully fold in the desiccated coconut. Scoop out small heaps with a moist teaspoon and place them on wafers. Place on a baking sheet lined with baking paper. Bake in a preheated oven at 130°C to 150°C for approximately 20 minutes (or until the coconut aroma begins to linger). The specified quantity yields approximately 35 pieces. Total nutritional value: 1168 kcal, 21g protein, 124g carbohydrates, 81g fat. Nutritional value per piece: 30 kcal, 0.02g protein, 3.25g carbohydrates, 2.11g fat.
