- 250 g desiccated coconut
- 800 ml water

Bring the desiccated coconut and water to a boil in an uncovered pot. Caution: It boils over easily! Remove from heat immediately. Let stand for 15 minutes. Purée the liquid in a blender or with an immersion blender. Pour the coconut milk through a fine sieve. Squeeze the desiccated coconut well in the sieve with a wooden spoon. Use like canned coconut milk. If you prefer thicker coconut milk, simply use 600 ml of water.
