Ingredients for 4 servings:
- 500 ml coconut milk
- 3 tbsp sugar, more if needed
- 3 tbsp cornstarch (heaped tbsp, e.g. Maizena, Mondamin)

Brilliantly simple, delicious and creamy!
Set aside some coconut milk and bring the rest to a boil in a saucepan. Meanwhile, combine the sugar and cornstarch with the reserved coconut milk (this works great in a cocktail shaker!). Once the coconut milk boils, simply add the sugar and cornstarch mixture and stir vigorously. Bring back to a boil, then pour into a dish rinsed with cold water and let cool.
