Vegan pudding with almond milk

Ingredients for 2 servings:

  • 350 ml almond milk (almond drink)
  • 40 g cornstarch
  • 4 packets of vanilla sugar
  • 5 drops of vanilla flavor
  • 3 tbsp coffee, already brewed, as desired

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Bring 3/4 of the almond milk to a boil. Whisk together the remaining ingredients and the remaining milk, stirring vigorously. While stirring constantly, add the mixture to the milk on the stovetop and simmer for about 1 minute. If you want the pudding to be more runny, add a little more milk. Tip: Enjoy the pudding with a delicious apple strudel, a slice of cake, or with fruit. The coffee in the pudding has a subtle caramel flavor.
