Ingredients for 4 servings:
- 1 mango(s)
- 1 bell pepper(s), green
- 1 chili pepper(s), red, chopped and pitted
- 3 tbsp oil (neutral)
- 2 tsp mustard seeds
- 1 lime(s), the juice
- Salt
- Pepper, freshly ground
- 1 tbsp mint leaves
- 4 cod fillets (180 g each)
- Flour
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel and dice the mango, and chop the bell pepper into small pieces. Sauté the bell pepper with chili and mustard seeds in oil. Add the mango and lime juice and sauté for another 2-3 minutes. Season with pepper and salt, and stir in the mint. Season the fish with pepper, salt, and flour, then fry in the remaining oil for about 3 minutes per side. Serve everything together and serve with baguette.
