Cod fillet in almond breading à la Didi

Ingredients for 2 servings:

  • 300 g cod fillet(s)
  • 2 m.-sized eggs
  • 3 tbsp, heaped wheat flour
  • 3 tbsp, heaped almonds, ground
  • 2 tbsp, heaped breadcrumbs
  • 1 tbsp sesame oil
  • n. B. Spice mix (fried fish seasoning salt)

Instructions

Working time approx. 7 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 13 minutes

Rinse the cod fillets and pat dry. Remove any remaining bones with needle-nose pliers or tweezers and season both sides with the fish seasoning salt. Beat the eggs until frothy. Mix the ground almonds with the breadcrumbs. Coat the fillets first in flour, then in the egg, and finally in the almond breadcrumbs. Heat a nonstick pan with the sesame oil and fry the fillets for about three minutes on each side over medium heat. Serve with fried leeks in almond batter.
