Ingredients for 2 servings:
- 4 cod fillets
- 2 onions, white
- 2 zucchinis
- 3 bell peppers
- 4 tbsp lemon juice
- 4 tbsp white wine
- 2 tbsp olive oil
- 1 small bunch of dill
- some salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Wash the fish and pat dry. Peel the onions and slice into half rings. Wash the zucchini and slice into half slices. Wash and trim the bell peppers and chop roughly. Wash the dill, spin dry, and chop half, leaving the rest whole. Preheat the oven to 170°C (fan). Place the vegetables in a baking dish. Add the lemon juice, white wine, olive oil, salt and pepper, and the chopped dill; mix well. Place the vegetables in the oven alone for about 10 minutes. After 10 minutes, place the fish fillets on top of the vegetables, season with salt and pepper, and then continue cooking in the oven for another 15 to 20 minutes. Baguette goes very well with this. Tip: Simply add or substitute your favorite vegetables, but pay attention to the cooking time.
