Cod on Spinach and Wild Garlic Mirror

The perfect cod on spinach and wild garlic mirror recipe with a picture and simple step-by-step instructions.

For the cod:

  • 750 g Cod fillet
  • 0,5 Pc. Lemon
  • 3 Pc. Clove of garlic
  • 3 tbsp Olive oil
  • Salt and pepper

For the spinach and wild garlic mirror:

  • 1 bunch Spinach
  • 1 bunch Wild garlic
  • 1 Pc. Onion
  • 50 g Butter
  • 1 tbsp Apple Cider Vinegar
  • Salt and pepper
  • Cream

For the spicy zucchini:

  • 1 Pc. Zucchini
  • 1 tbsp Pumpkin seed oil
  • 1 tbsp Olive oil
  • Chili salt
  1. To begin with, remove the peel from the fish fillet and coat with the marinade, which is made from lemon juice, squeezed garlic, olive oil and salt & pepper. Let it steep in the refrigerator for approx. 3 hours.
  2. Now cut the zucchini into small cubes and marinate with pumpkin seed oil, olive oil and a little chilli salt. Let it steep in the fridge.
  3. Dice the onion and sauté in butter until translucent. Add the spinach and sauté for about 5 minutes until the spinach collapses. Now pour on the cream and simmer for about 3 minutes. Season with salt and pepper. Now add the fresh wild garlic and toss in it for about 2 minutes. Then the spinach and wild garlic mixture can be mixed.
  4. Cook the marinated fish at 60 ° in the steamer for about 15 minutes. Now spread the spinach wild garlic on the plate and place the fish on top. Arrange the colorful cress with the spicy zucchini and caviar on top. On request, roasted onions can be sprinkled on top.
