Beef Fillet in Strawberry and Pepper Sauce
The perfect beef fillet in strawberry and pepper sauce recipe with a picture and simple step-by-step instructions.
For the beef fillet:
- 1 kg Beef fillet
- 6 Pc. Rosemary sprigs
For the strawberry and pepper sauce:
- 250 g Strawberries
- 1 Pc. Onion
- 1 tbsp Apple Cider Vinegar
- 9 Pc. Colorful peppercorns
For the cheese dumplings:
- 350 g Mountain cheese
- 1 bunch Herbs
- 2 Pc. Eggs
- 1 Pc. Onion
- 350 g Bread roll
- 200 ml Milk warm
- 1 tbsp Flour
- 1 tbsp Breadcrumbs
- 1 tbsp Olive oil
- 100 g Butter
- 15 Pc. Honey tomatoes
- 1 tsp Wild garlic salt
- 100 g Grated Parmesan
For the vegetables from the grill plate:
- 2 Pc. Pointed peppers
- 5 Pc. Big mushrooms
- 4 Pc. Spring onion
- 6 Pc. Eggplant fresh
- 1 Pc. Zucchini
- 1 Pc. Carrot
- 1 bunch Asparagus
- 3 Pc. Garlic cloves
- 20 ml Olive oil
- Salt and pepper
- First, cut all the vegetables or quarter them and marinate with olive oil, salt and pepper and let them steep in the refrigerator for about 3 hours.
- Put the vacuum-sealed beef fillet in the steamer and cook sous vide at 54 ° for approx. 4 hours.
- Mix the dried bread roll with the milk, eggs and fresh herbs. In a pan, fry the onion in olive oil until translucent. Add this to the cam mixture and stir vigorously. Dice the mountain cheese and add to it. Use the flour and breadcrumbs to bind. Season with salt and pepper. Let the mixture rest for approx. 1 hour, stir again and then shape into small dumplings. Then cook in the steamer for 20 minutes.
- Grill the marinated vegetables in the oven at 220 degrees for 15 minutes.
- Dice an onion and sauté with a little olive oil until translucent. Deglaze with 1 tablespoon of apple cider vinegar and simmer for about 3 minutes. Now add the diced strawberries, add 9 colored peppercorns and let simmer for another 3 minutes. Now this can be mixed up with the magic wand.
- Let the butter with the honey tomatoes and 1 teaspoon wild garlic salt melt over medium heat.
- Now remove the meat and sear it on all sides on the grill plate. Now keep warm again in aluminum foil for a few minutes.
- Now the grilled vegetables, the cheese dumplings can be arranged on the plates. Serve the cheese dumplings with the melted butter and the warm tomatoes and some Parmesan cheese. Cut the meat open and put it on the plate and pour the strawberry and pepper sauce over it. Decorate the plate with fresh strawberries.
