Ingredients for 4 servings:

  • 4 cod fillets
  • 1 stalk(s) leek
  • 3 carrots
  • 1 zucchini
  • 1 lemon(s), juice
  • 50 g herb butter
  • some salt and pepper
  • Grease for the foil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the leeks, carrots, and zucchini into thin, long strips. Grease four sufficiently large pieces of aluminum foil and arrange the vegetable strips on them, seasoning with salt and pepper. Season the cleaned fillets with salt and pepper and place them on top of the vegetables. Spread the herb butter on top and drizzle with lemon juice. Now seal the foil to resemble a candy. Bake in the oven at 200°C (top/bottom heat) for about 20 minutes. Can also be prepared with other fish fillets, particularly salmon. Note from Chefkoch.de: If you don’t want to use aluminum foil, use parchment paper or baking paper for the package. Using lemon juice and salt is recommended for health reasons. Aluminum foil lined with baking paper on the food-facing side has also been available for some time, and this is also recommended.
