Ingredients for 2 servings:
- 400 g cod loins (2 pieces of 200 g each)
- 1 small bell pepper(s), red
- 1 small bell pepper(s), yellow
- ½ small bell pepper(s), green
- ½ vegetable onion(s)
- 1 garlic clove(s)
- 1 tbsp olive oil
- 400 g tomatoes, pureed
- 100 ml vegetable stock
- some lemon juice
- e.g. salt and pepper
- e.g. paprika powder

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Simple, low-calorie and quick
Rinse the cod, pat dry, and drizzle with lemon juice. After 10 minutes, season with salt and pepper. Meanwhile, finely chop the bell pepper, onion, and garlic and sauté in olive oil. Then add the passata and vegetable stock and cook until tender, depending on your preference. Season with salt and pepper. Then add the cod and cook, covered, for about 5 minutes on each side. Serve with rice as a side dish.
