Ingredients for 4 servings:
- 3 onions
- 3 tbsp butter
- 2 tbsp olive oil
- 4 m.-sized potatoes
- 1 bell pepper(s), red
- 1 bell pepper(s), yellow
- 300 ml vegetable stock
- salt and pepper
- Paprika powder, sweet
- 3 tbsp parsley, finely chopped
- 800 g cod fillet(s)
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Peel the onions, then thinly slice them and the peppers, and dice the potatoes. Sauté the onions in a pan with butter and olive oil until translucent. Add the diced potatoes to the pan and fry for a few minutes. Add the red and yellow peppers and pour in the vegetable stock. Season with salt, pepper, and paprika. Add more vegetable stock if desired. Let everything simmer with the lid on for 10 minutes. Meanwhile, wash the cod and cut it into small pieces. Layer it over the vegetables in the pan, season lightly with salt and pepper again, and let the fish cook with the lid on for 10 minutes. Garnish with parsley.
