Cod with saffron sauce

Ingredients for 4 servings:

  • 4 cod fillets
  • 1 small onion(s), finely diced
  • 1 tbsp lemon juice
  • salt and pepper
  • Flour
  • butter
  • 400 ml fish stock
  • 150 ml dry white wine
  • 1 can saffron threads
  • 200 g crème fraîche
  • salt and pepper
  • lemon juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Bring the fish stock with the finely diced onion, saffron, and white wine to a boil over medium heat. Add the crème fraîche and cook until the sauce is thick. Strain and season with salt, pepper, and a little lemon juice. Wash the cod fillets and pat dry. Season with salt, pepper, and lemon juice, and coat in flour. Heat the butter in a pan and fry the cod fillets until golden brown on both sides. Serve the fish with the sauce, boiled potatoes, and salad.
