Ingredients for 1 servings:
- 2 tbsp water, warm
- 2 tsp instant coffee
- 2 tbsp flaxseed meal
- 3 bananas, very ripe
- 1 pinch of vanilla pulp
- 3 tbsp coconut oil or coconut fat, melted
- 180 ml plant milk (plant drink) (cashew, soy or almond milk)
- 200 g whole wheat flour
- 4 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 150 g oat flakes, wholegrain
- 2 tbsp oat flakes, wholegrain for sprinkling
- 50 g chocolate, vegan
- some coconut oil for the mold, melted
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Dissolve the coffee in the water. Puree the bananas. Add all the liquid ingredients and mix. Combine the whole wheat flour, oats, flaxseed, salt, cinnamon, vanilla bean seeds, and baking powder in a bowl. Mix with the liquid ingredients to form a batter. Finally, chop the chocolate and fold in. Grease a loaf pan with melted coconut oil and pour in the batter. Sprinkle with oats. Bake in a preheated oven at 180°C (350°F) for about 50 minutes.
