Coffee sorbet

Add the sugar and lemon zest to the hot coffee, stir well, and let cool. Remove the lemon zest and pour the coffee into a large, shallow dish, preferably metal, and place in the freezer. After about 30 minutes, stir with a whisk or fork. Repeat this process until the entire liquid has frozen into crumbs. If you prefer it creamier, brew a little less coffee but more vigorously and add the milk or cream. A good shot of rum or whiskey, added before freezing, also gives a great flavor. However, it will take a little longer. A variation on how to make it: After the coffee is brewed and seasoned, pour it into ice cube trays (small cubes) or plastic ice cube bags and freeze. Then grind it well with a blender or ice crusher. Pour the sorbet into a glass and serve with some whipped cream or a scoop of vanilla ice cream.
