Ingredients for 1 servings:

  • 10 tsp, heaped coffee powder, to taste
  • 1 ¼ liters of water
  • 1 pepper, red, fresh, cleaned
  • 15 g ginger, fresh, net
  • 10 g mango(s), dried and sliced
  • 2 limes, the juice
  • 500 g gelling sugar, 3 : 1

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

With ginger, pepperoni, mango and lime juice

Brew a filter coffee from water and the coffee grounds. Be sure to adjust the amount of coffee grounds to your own taste, otherwise the jelly will not taste good! Pour the brewed coffee into a large pot. Place the peppers, ginger, and mango in a clean, small linen cloth, tie it together with string, and place the bag in the coffee. Squeeze the limes and set the juice aside. Heat the coffee in the pot, add the gelling sugar, and stir. Once boiling, let it simmer for 5 minutes while stirring. After this time, turn off the heat, remove the linen bag, and stir in the lime juice. Immediately pour the hot jelly into twist-off jars and seal them. At first, it will taste like your favorite coffee (assuming you’ve measured it correctly), with a slight hint of fruity spiciness and a fresh, lemony note on the finish. Also great for sauces, soups, desserts, dips, dressings, under quark on a sandwich, etc. – just give it a try.
