Ingredients for 1 servings:

  • 2 egg whites
  • 160 g sugar
  • 1 tbsp powdered sugar
  • 1 tsp instant coffee powder
  • 40 g walnuts
  • 40 g brown sugar for sprinkling

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Beat the egg whites until stiff, gradually adding the sugar. In a bowl, mix the powdered sugar with the instant coffee. Stir continuously to the egg white and sugar mixture. Grind the walnuts in a food processor and slowly stir them into the mixture. If you prefer, you can finely chop the nuts with a knife. Place a teaspoonful of the mixture into small paper baking cups and sprinkle with brown sugar. Bake in the preheated oven (180°C) for about 15 minutes. Then increase the temperature slightly and bake for another 25 minutes. Turn off the oven after the baking time, open the door, and let the pastries cool in the oven.
