Coffee Spice Chocolate Mousse

The perfect coffee spice chocolate mousse recipe with a picture and simple step-by-step instructions.

  • 2 Egg yolks – or 3 small ones
  • 2 Eggs
  • 2 tablespoon Sugar
  • 500 ml Cream
  • 200 g Dark chocolate 86%
  • 0,5 teaspoon Coffee and spice mix
  • 1 teaspoon Bourbon vanilla sugar

Preface

  1. I bought the coffee spice from a gourmet chef – unfortunately he does not disclose the composition – it is important to know that it contains a little coarse sea salt, of course also ground coffee beans, I suspect cardamom and cinnamon ….. you can use it also prepare delicious sauces …..

preparation

  1. Melt the chocolate and then let it cool slightly – whip the cream until stiff and chill

preparation

  1. Beat the eggs and egg yolks together with the sugar, vanilla sugar and the coffee spice over the steam until frothy – add the melted lukewarm chocolate and then beat the mixture until cold – only then fold in the whipped cream – pour the mousse into a sealable container and cook for at least 4 chill std

serve and decorate

  1. cut out cams from the mass with 2 spoons (photo with espresso) or use an ice cream scoop (photo with square plate) – place the chocolate mousse on the plate decorated with chocolate shavings, egg liqueur and chocolate sauce – preferably serve with an espresso!

Tip:

  1. I freeze the 2 remaining proteins! and when I have collected several proteins in the freezer there is a delicious chocolate snow cake (recipe in my KB) ….
