Ingredients for 4 servings:

  • 2 duck breasts
  • some salt and pepper, from the mill
  • some fat, for frying
  • some orange juice, fresh
  • some paprika powder, sweet

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

cold duck breast – easy to prepare for a buffet

Preheat the oven to 90 degrees Celsius. Season the duck breasts with salt and pepper and sear in a frying pan for three minutes on the fat side and one and a half minutes on the meat side. Remove from the pan, drizzle with a little fresh orange juice, and season all over with sweet paprika. Place a rack on an ovenproof roasting dish, place the duck breasts on it, and let it rest in the oven at 90 degrees Celsius for one hour. Remove from the oven and let cool, then slice thinly and serve with dips or sauces.
