Cold leek vegetables in olive oil

Ingredients for 4 servings:

  • 3 tbsp olive oil
  • 2 carrots
  • 2 onions
  • 1 ½ tsp salt
  • 1 kg leek
  • 2 tbsp basmati rice
  • 1 tsp sugar
  • 200 ml water, hot
  • 3 tbsp extra virgin olive oil
  • some lemon wedges

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Briefly sauté the diced onions in olive oil. Then add the chopped leek and the finely chopped carrots, stir gently, and simmer with the lid closed for about 12 minutes over medium heat. Then add the rice, salt, sugar, and water, stir again, and simmer for another 13-15 minutes over low heat, until the rice is tender. Finally, stir in a little olive oil and leave to cool with the lid on. To serve, add a few lemon wedges. Flatbread goes well with this dish. It tastes best when kept cool for a day. Alternatively, you can add the juice of 1 orange instead of just water.
