Ingredients
Cookie dough:
- 200 g Butter at room temperature
- 120 g Powdered sugar
- 1 Egg yolk
- Lemon zest
- 1 pinch Salt
- 300 g Spelt flour
for decoration:
- 2 Egg yolk
- 2 tbsp Cream
- Colorful sprinkles
- Chocolate sprinkles
- Coconut flakes
- Chopped almonds
Instructions
- Process all dough ingredients into a smooth dough, shape into a ball and let rest in the refrigerator for at least 90 minutes. (I had the dough in the fridge overnight)
- Preheat the oven to 190 ° C and line the baking sheets with parchment paper. Whisk the cream with the egg yolk.
- Roll out the dough thinly in portions, cut out the biscuits, place on the baking sheet, brush with the egg yolk and cream mixture and decorate as you wish.
- Bake the cookies for about 8-10 minutes at 190 ° C.
