Ingredients for 2 servings:

  • 200 g mushrooms
  • 1 small zucchini
  • 1 bell pepper(s)
  • 2 onions
  • 1 carrot(s)
  • 2 garlic cloves
  • salt and pepper
  • chili powder
  • cumin
  • rosemary
  • Thyme
  • olive oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Chop the mushrooms, zucchini, peppers, onions, carrots, and garlic, then marinate in olive oil and mix with the herbs and spices. If desired, thread them onto shish kebab skewers and grill. You can also wrap them in aluminum foil and bake them in the oven at 170°C (convection oven) for about 45 minutes.
