Colorful Indonesian meat stew

Ingredients for 4 servings:

  • 500 g pork belly
  • 2 tbsp butter or margarine, for frying
  • 1 leek(s)
  • 1 bell pepper(s), red
  • 2 apples, sour
  • ¼ liter broth, from a cube or instant
  • 1 ½ tbsp soy sauce
  • 1 tbsp wine vinegar
  • 1 tbsp tomato paste
  • 1 ½ tsp curry powder
  • ½ tsp garlic powder
  • ½ tsp ginger powder
  • 1 banana(s)
  • 1 tbsp oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Remove the rind from the pork belly and cut the meat into 3 cm cubes. Heat half of the fat and fry the meat cubes in it, turning occasionally, until browned. Clean and wash the vegetables. Cut the leek, bell peppers and peeled apples into strips and sauté briefly in the remaining fat, then add to the meat. Pour the hot stock over the meat and vegetables and season with soy sauce, wine vinegar, tomato paste, curry powder, garlic and ginger. Simmer the stew with the lid closed over low heat for about 20 minutes, then season again with the spices to taste. Peel the banana, cut into slices and brown them briefly in hot oil. Transfer the Indonesian meat dish to a preheated bowl and garnish with the banana slices. Cook the rice and serve as a side dish.
