Ingredients for 4 servings:

  • 150 g lentils, red
  • 1 tbsp soup seasoning, homemade or purchased
  • n. B. water
  • 1 bunch of spring onions or a leek
  • 2 bell peppers
  • ½ mango(s), ripe
  • 2 Pepper
  • 2 tbsp white wine vinegar
  • 1 tsp honey
  • 2 tbsp olive oil
  • 2 tbsp freshly chopped herbs, e.g. parsley and chives

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Clean, finely chop, and wash the leek and spring onion. Clean, wash, and dice the bell pepper. Cook the leek, bell pepper, and lentils in a little broth for about 10 minutes. If using spring onions, I would skip the cooking process. Peel and dice the mango. Mix the dressing and season to taste. Strain the cooked lentils and vegetables. Toss into the dressing along with the mango and serve.
