Colorful mashed potatoes "Italia"

Ingredients for 2 servings:

  • 2 large potatoes, floury
  • 2 Pepper, red, long, mild
  • 1 small pak choi
  • 1 small carrot(s)
  • 1 tsp, levelled black pepper, freshly ground
  • 1 pinch(s) nutmeg, freshly grated
  • 1 tsp chicken broth powder
  • 4 tbsp extra virgin olive oil
  • 4 tbsp whole milk
  • n. B. Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Colorful like the national flag of Italy, it not only looks good, but tastes good too.

Wash and peel the potatoes, and quarter them lengthwise and crosswise. Boil the quarters in one liter of salted water for 20 minutes until tender. Meanwhile, remove the stems from the peppers, wash them, halve them lengthwise, remove the seeds, and cut them crosswise into thin strips. Remove the leaves from the pak choi and cut the white and green parts crosswise into approximately 4 mm wide strips. Wash and peel the carrots, and julienne them into thin strips. Drain the potatoes and mash them using a suitable ricer. Add all ingredients to the mashed potatoes, mix, and season with salt. Bring the mixture to a boil briefly in a covered nonstick pan and remove from the heat. Serve the colorful mashed potatoes as a side dish to meat or fish dishes.
