Ingredients for 4 servings:
- 2 onions
- 2 garlic cloves
- 2 zucchini (approx. 400 g)
- 1 eggplant(s)
- 2 bell peppers
- 1 can/n beans, large white (425 ml)
- 500 g minced meat, mixed
- 4 tbsp olive oil
- Salt and pepper, black
- 125 ml red wine
- 1 gr. can/n tomatoes (850 ml)
- 125 ml broth
- 1 tsp herbs de Provence
- some chili powder
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Finely chop the onions and garlic. Clean the vegetables. Slice the zucchini, dice the eggplant, and strip the bell pepper. Drain the beans. Brown the minced meat in oil. Season with salt and pepper. Add the vegetables, onion, and garlic and sauté. Deglaze with red wine. Stir in the tomatoes with their juice, broth, and beans. Season with herbs and chili powder and simmer for about 30 minutes.
