Ingredients for 6 servings:

  • 1 ½ kg potatoes
  • 2 cups of cream cheese
  • 1 cup low-fat curd cheese
  • 5 tbsp milk
  • 1 bunch of chives
  • 1 small onion(s)
  • salt and pepper
  • Caraway, ground
  • n. B. Liver sausage, fine
  • n. B. Pickled gherkin(s)
  • butter
  • linseed oil

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Place the quark in a bowl. Finely chop the chives and onion and stir into the quark along with salt, pepper, caraway seeds, and milk. It should be nice and creamy but not too runny. Cook the potatoes, still in their skins, in water with a little caraway seeds and salt until soft. Serve each plate with quark, a slice of liverwurst, gherkin, and perhaps a knob of butter. Everyone peels their own potatoes at the table. Tip: We always keep a bottle of good linseed oil on the table. It tastes wonderful with this dish.
