Ingredients
 

  • 8 Jacket potatoes from the previous day
  • 1 small Diced onion
  • 125 g Meat sausage
  • 2 Gherkins
  • 0,5 tsp Black pepper from the mill
  • 0,5 tsp Salt
  • 1 tsp Sugar
  • 2 tsp Dijon mustard
  • 3 tbsp Pickled cucumber stock
  • 1 bunch Chopped fresh parsley
  • 3 tbsp Pink mayonnaise
  • 2 Carrots
  • 2 Some cream

Instructions
 

  • Cut the peeled potatoes, sausage and cucumber into fine cubes and place in a bowl with the diced onion. Season with pepper, salt and sugar, add the mustard and cucumber stock, also the mayonnaise and chopped parsley, then mix everything together and leave it covered.
  • Peel the carrots and cut into small cubes, then cook for about 10 minutes in steam and cool again. Stir into the lettuce when cool and, if necessary, add some more cream; the salad should be nice and juicy and not too dry. I like to serve it with pan-fried meat.
