Colorful potato salad, lukewarm

Ingredients for 4 servings:

  • 800 g potato(s), waxy
  • 500 g green beans (e.g. frozen green beans)
  • 8 sausages (Vienna sausages)
  • 1 tbsp butter
  • 2 onions
  • 1 tbsp mustard
  • 1 tsp herbal salt
  • 1 tsp sugar
  • Pepper, freshly ground
  • 6 tbsp oil
  • 3 tbsp vinegar

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Boil the potatoes as if they were jacket potatoes. Cook the green beans (for frozen beans, this works best in the microwave according to the package instructions). Cut the Vienna sausages into sticks (quartered lengthwise and crosswise) and fry them in butter until delicious. Add the cooked beans and fry briefly. Finely dice the onions. Make a marinade with vinegar, oil, mustard, and spices. If this mixture is too intense/spicy for you, you can add a little water to tone it down. Drain the potatoes, peel them, and slice them. Add them to the marinade and stir well. Add the beans and sausages from the pan and stir again. Serve lukewarm.
