Ingredients for 4 servings:
- 3 bell peppers, red, green and yellow
- 4 tomatoes
- 500 g turkey breast
- 2 tbsp oil
- 1 bunch of spring onions
- Salt
- Pepper, white
- Paprika powder, sweet
- 250 ml vegetable stock
- Herbs
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Wash, halve, and clean the bell peppers. Quarter the halves and cut into wide strips. Score the tomatoes, blanch them in boiling water, peel them, and halve them. Deseed and halve the halves. Cut the meat into approximately 2 cm cubes. Heat the oil, brown the meat briefly, add the finely chopped spring onions, cook briefly, and sprinkle with the spices. Add the vegetable stock and the bell pepper strips, cover, and simmer for 15 minutes. Add a little more vegetable stock if desired. Add the tomatoes for the last 5 minutes and stir in a tablespoon of herbs, if desired.
