Ingredients for 4 servings:
- 200 g cauliflower
- 200 g broccoli
- 200 g beans, green, fresh (e.g. princess beans)
- 1 m.-large leek(s)
- 200 g carrot(s)
- 200 g zucchini
- 250 g kohlrabi
- 200 g potatoes
- 750 ml vegetable stock
- 1 bay leaf
- 2 juniper berries
- 3 peppercorns, black
- 1 tbsp parsley, chopped
- 100 g poultry sausage (turkey sausage)
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 20 minutes
Divide the broccoli and cauliflower into small florets. If necessary, remove the strings from the beans. Wash the leeks, carrots, and zucchini. Then slice the leeks into rings and dice the carrots and zucchini. Peel the kohlrabi and potatoes and dice them as well. Bring the broth and seasonings to a boil, then add the vegetables and potatoes. Let it simmer for about 30 minutes. Dice the turkey sausage and add it. Season to taste and garnish with parsley.
