Colorful salad

Ingredients for 4 servings:

  • 1 head of lettuce
  • 1 can kidney beans
  • 1 can of corn
  • ½ cucumber(s) (vegetable cucumber)
  • 150 g cheese (butter cheese)
  • 2 red bell peppers
  • possibly mushrooms

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and cut the lettuce into small pieces. Drain well and place in a large enough bowl. Drain the kidney beans and corn well and add to the salad. Cut the bell pepper, cucumber, and butter cheese (Gouda or Edam cheese can also be used) into small cubes. Season everything gently with salt and pepper, as the dressing will also add flavor. Drizzle the dressing over the salad. If you like, you can also slice a few fresh mushrooms and add them raw to the salad. It’s great for parties (mine always went in a flash) or as a substitute/addition to a dinner.
