Colorful salad with grapes and walnuts

Ingredients for 6 servings:

  • 1 tbsp walnut kernels, chopped
  • 1 small onion(s), approx. 100 g
  • 200 g mushrooms, white
  • 300 g grapes, blue and green
  • 1 head of radicchio
  • 150 g lamb’s lettuce
  • ½ head of romaine lettuce
  • 8 tbsp raspberry vinegar
  • 6 tbsp walnut oil
  • salt and pepper
  • Sugar or liquid sweetener
  • e.g. diced Brie(s) or feta cheese

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely chop the onion. Clean and wash the mushrooms and slice them thinly (I always use an egg slicer). Wash, halve, and deseed the grapes, or buy the sweet, seedless ones. Clean, wash, and dry the lettuce. Tear or chop the romaine lettuce and radicchio into smaller pieces. For the dressing, whisk together the vinegar, salt, pepper, and sugar. Whisk in the oil. Fold in the onions and nuts. Season to taste and adjust the seasoning if necessary. Mix with the remaining ingredients. Optionally, you can also add cubes of feta cheese or diced Brie. This not only looks great but also tastes great. Tip: I always do this with my hands for portions for more than 2 people. Put on disposable gloves and mix everything with your hands.
