Ingredients
SALAD
- 400 g Leaf salads
TOMATO PESTO
- 1 teaspoon Pine nuts
- 3 Dried tomatoes in oil
- 1 Clove of garlic
- 2 tablespoon Olive oil
DRESSING
- 1 Shallot
- 4 Dried apricots
- 1 tablespoon Fruit vinegar
- 1 tablespoon Orange
- 1 tablespoon Honey
- 1 tablespoon Oil
- Pepper
- Salt
- 2 tablespoon Walnuts
Instructions
SALAD
- Wash the lettuce, spin dry and place on a plate.
PESTO
- Roast the pine nuts in a pan without oil, dice the tomatoes, peel the garlic and puree everything with the oil.
DRESSING
- Peel the shallot and dice it with the apricots.
- Mix vinegar, honey, orange juice, salt and pepper with the oil.
- Now spread the dressing with the tomato pesto over the salad and pour the chopped walnuts on top.
