Ingredients
 

SALAD

  • 400 g Leaf salads

TOMATO PESTO

  • 1 teaspoon Pine nuts
  • 3 Dried tomatoes in oil
  • 1 Clove of garlic
  • 2 tablespoon Olive oil

DRESSING

  • 1 Shallot
  • 4 Dried apricots
  • 1 tablespoon Fruit vinegar
  • 1 tablespoon Orange
  • 1 tablespoon Honey
  • 1 tablespoon Oil
  • Pepper
  • Salt
  • 2 tablespoon Walnuts

Instructions
 

SALAD

  • Wash the lettuce, spin dry and place on a plate.

PESTO

  • Roast the pine nuts in a pan without oil, dice the tomatoes, peel the garlic and puree everything with the oil.

DRESSING

  • Peel the shallot and dice it with the apricots.
  • Mix vinegar, honey, orange juice, salt and pepper with the oil.
  • Now spread the dressing with the tomato pesto over the salad and pour the chopped walnuts on top.
