Ingredients for 6 servings:
- 500 g sausage (poultry sausage)
- 1 can peas, medium fine
- 4 eggs, hard boiled
- 3 large onions
- 1 red bell pepper(s)
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar, light
- 2 tbsp water
- 2 tbsp, levelled sugar
- Salt and pepper, freshly ground black
- n. B. Herbs, (salad herbs)

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Without mayonnaise – light and spicy!
Cut the sausage into wafer-thin slices and drain the peas. Cut the eggs into eighths, halve the onions and slice them into wafer-thin half rings, finely slice the red bell pepper, and place everything in a large bowl. Make a sweet and sour marinade with the remaining ingredients, adding a few salad greens if desired. Mix the marinade into the ingredients and season the salad again with salt and pepper. Let it sit for at least 1 hour. Serve with fresh baguette or white bread.
