Ingredients for 2 servings:
- 20 shrimp(s), frozen
- 1 m.-large zucchini
- 1 half red bell pepper(s)
- 8 mushrooms
- 2 m.-large tomato(s)
- 6 shallots
- 1 onion(s)
- 3 cloves garlic
- 2 tbsp herbs de Provence, frozen
- olive oil
- Sea salt
- Pepper from the mill
- 1 bag of long grain rice
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
with rice, low in calories
Clean, wash, and roughly chop the vegetables. Remove the cores from the tomatoes. In a large bowl, add about 5 tablespoons of olive oil and the finely chopped garlic cloves. Add the vegetables, herbs, salt, and pepper. Cover and let stand for about 2 hours. Prepare the rice according to the package instructions. Fry the shrimp in a little olive oil over medium heat. After about 2 minutes, add the contents of the bowl. Fry everything quickly. Just before serving, season to taste with salt and pepper.
