Colorful tomato soup

Ingredients for 8 servings:

  • 2 onions
  • 2 carrots, approx. 150 g
  • 4 tbsp oil
  • 2 tsp sugar
  • 2 gr. can/n tomatoes, peeled, 850 g each
  • 400 ml vegetable stock
  • 200 g cooked ham
  • 2 tbsp parsley, chopped
  • 300 ml cream
  • 150 g baking peas

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

the classic with a twist

Finely dice the onions and coarsely grate the carrots. Heat the oil in a saucepan. Sauté the diced onions and grated carrots. Add the sugar and sauté briefly. Add the peeled tomatoes and broth to the vegetables. Season with salt and pepper. Cover and bring the soup to a boil, then simmer over low heat for 15 minutes. Meanwhile, dice the cooked ham. After the cooking time, puree the soup and add the heavy cream. Bring the soup back to a boil and then season to taste. Ladle the soup into bowls and sprinkle with the ham, parsley, and garden peas.
