Ingredients for 3 servings:

  • 1 large onion(s), approx. 225 g
  • 100 g meat sausage (garlic meat sausage)
  • ½ bell pepper(s), red
  • ½ bell pepper(s), yellow
  • ½ bell pepper(s), green
  • ½ can corn (320 g-can)
  • ½ can kidney beans (400 g-can)
  • 2 tbsp, heaped tomato paste
  • 1 can of chopped tomatoes (400 g-can)
  • 150 ml vegetable stock
  • Salt and pepper, white
  • Paprika powder, sweet
  • Harissa
  • 1 tsp, levelled honey
  • Stock powder, optional
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Simple stew with sausage and colorful vegetables

Peel the onion and dice. Slice the sausage, halve them, and then cut into strips. Wash, quarter, and deseed the peppers, then cut them into strips. Heat the olive oil in a pan. Add the diced onions and fry until golden brown. Add the sausage and fry briefly. Stir in the tomato paste and sauté briefly. Add the chopped tomatoes and vegetable stock to the pan and stir in. Fold in the prepared vegetables, spices, and honey. Carefully season with harissa. Let the vegetable stew simmer for about 10 minutes. Finally, season to taste and adjust the seasoning if desired. The vegetable stew can be eaten on its own or with baguette. Leftover pasta from the day before can also be used. It also goes well with rice or mashed potatoes.
