Quick bean and tomato soup

Ingredients for 4 servings:

  • 1 gr. can/n beans, white, with soup vegetables
  • 1 small can of corn
  • 1 can kidney beans
  • ½ bell pepper(s), green
  • 2 m.-large tomato(s), e.g. plum tomatoes
  • 1 onion(s)
  • 1 pack of tomatoes, pureed
  • 300g sausage of your choice, e.g., grilled bratwurst, bockwurst, Cabanossi, salami…
  • 500 ml vegetable stock
  • e.g. salt and pepper
  • n. B. Paprika powder, sweet
  • e.g. chili flakes
  • 1 tbsp margarine, or oil for frying
  • possibly baguette(s) or ciabatta

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Chop the onions and fry in margarine or oil. Finely chop the bell pepper and fry them with the rest. Pour in the stock. Add the passata. Drain the corn and kidney beans. DO NOT drain the white beans. Chop the tomatoes and add them to the pot with the beans and corn. Bring to a boil. Stir occasionally to prevent burning. Chop the sausage and add it. Season to taste. Continue to simmer on very low heat until the desired consistency is reached (approx. 20-30 minutes). Stir frequently. Serve with baguette/ciabatta, if desired.
