Confectioned Duck Legs

The perfect confectioned duck legs recipe with a picture and simple step-by-step instructions.

  • 2 Pc. Duck legs, ready to cook
  • Neutral vegetable fat
  • Clarified butter
  • 4 Pc. Juniper berries
  • 8 Allspice grains
  • 3 Cloves
  • Salt
  • Black pepper from the mill
  1. Preheat the oven to 80 – 90 degrees. Preheat vegetable fat in a saucepan to 80 degrees. Check with a temperature sensor. Pat the duck legs dry and place in the heated fat. They should be just covered. For 3.5 – 4 hours in put the oven down, checking the temperature of the oil.
  1. Melt the butter lard in a pan, add the spices. Fry the duck legs in it until golden brown. Season with salt and pepper. Serve with the side dishes you want, in the picture it’s red cabbage and dumplings.
