Duck Legs on Orange Chilli Sauce

Ingredients
 

  • 2 Duck legs
  • 250 ml Duck broth
  • 250 ml Orange juice
  • 1 tsp Red chilli flakes
  • 1 tsp Soy sauce
  • Salted pepper from the mill

Instructions
 

  • Remove excess fat from the duck legs, cut it into small pieces and pour it into a roaster. Sear the duck legs in this fat on both sides and then put them in the oven, preheated to 180 degrees, for about 90 minutes. Add the stock and grill for the last 10 minutes.
  • At the end of the cooking time, remove the duck legs and keep them warm. Boil the roast set with the orange juice, add the chilli flakes and soy sauce, reduce a little and season with salt and pepper. Arrange the legs with the side dishes on plates, cover with the sauce and serve.
