Ingredients for 4 servings:
- 1 cup of rice, any kind (approx. 200 g)
- 6 cups of water
- 1 pinch of salt
- 1 tsp oil
- 250 g soup vegetables, cleaned, diced
- 2 eggs
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 35 minutes
Asian rice porridge with vegetables and eggs
Combine rice, water, salt, oil, and soup vegetables in a pot and bring to a boil, stirring occasionally. Simmer on low heat for 1.5 hours (1-2 of 9), stirring occasionally. Add water according to the desired thickness of the congee; the more you stir, the more the rice and soup vegetables will break down into a smooth mixture. Just before serving, bring back to a boil, crack the eggs into the congee, and mix well.
