Carrots with cardamom

Ingredients for 4 servings:

  • 800 g carrot(s)
  • 1 piece(s) ginger
  • 2 tbsp clarified butter
  • 2 cardamom pods
  • 3 tbsp maple syrup
  • salt and pepper
  • 1 orange(s), juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Clean and peel the carrots, and cut into slices or sticks. Peel and finely chop the ginger. Heat a large pan. Add the clarified butter and fry the ginger for 1 minute, stirring. Crush the cardamom pods with the back of a knife and add them. Place the carrots in the pan and add the maple syrup. Fry over medium heat for 2-3 minutes, stirring occasionally. Season the carrots with salt and pepper and deglaze with the orange juice. Cover and cook for 10-12 minutes, shaking the pan occasionally.
