Ingredients for 1 servings:
- 1 jar Mixed Pickles, 400 g drained weight
- 300 g cooked ham, diced
- 550 g water
- ½ cube beef broth, instant
- 15 g soup spice, dried
- 25 g vinegar
- 65 g powder (aspic powder-200 Bloom)
- 2 dashes Worcestershire sauce
- 1 Intestine, (sterile intestine) cal. 90/50
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
First, cut the cooked ham into smaller cubes and toss the drained vegetables in boiling water (this helps it hold together better). Then stir the aspic powder into 250 ml of cold water and let it swell for 5 minutes. Mix the vegetable pieces and the ham, then bring the remaining 300 g of water to a boil with the dried seasoning, dissolve the stock cube in it, add the vinegar and Worcestershire sauce, and season again. Then stir in the soaked aspic powder, dissolve, and heat the whole thing up again. Now add the cooked ham cubes and the vegetables, mix everything evenly, fill the 90 cm sterile casing, and let it cool. If you place a small board on top of the ham aspic and place a weight on it, you will get an oval shape. You can also pour the aspic into a suitable dish, let it cool, place it briefly in hot water, and then turn it out.
