Cookie Monster Muffins

Ingredients for 12 servings:

  • 125 g butter (or margarine)
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 300 g flour
  • 3 eggs
  • 1 packet of baking powder
  • 125 ml milk
  • ½ package desiccated coconut
  • 125 g marzipan paste
  • 200 g powdered sugar
  • 1 package of chocolate decorations (chocolate drops)
  • some water
  • some food coloring, blue
  • 1 package of cookies, American Cookies (8 pieces)

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

First, prepare the muffins. Cream the butter (or margarine) until fluffy. Gradually stir in the sugar. Briefly beat in the eggs. Mix the flour and baking powder and stir in. Add the milk. Pick out 24 (or better: 26) round chocolate chips and set aside. Stir the rest into the muffin batter. Fill the batter into 12 muffin cups (up to the rim) and bake in a muffin tin at 180°C (350°F) for approx. 20-25 minutes. Meanwhile, knead the marzipan mixture with 75g of powdered sugar, weighing out approx. 4-5g for each eye. Press the round chocolate chips (set aside) into the marzipan balls. Color the desiccated coconut in a glass bowl with the blue food coloring. Mix a glaze from the powdered sugar, blue food coloring, and water. This should be fairly thick. Brush the muffins with it and sprinkle with coconut flakes. Let the icing dry. Then cut out a mouth for the Cookie Monster (careful so the muffin doesn’t break) and insert a halved cookie. Finally, attach the eyes with icing or toothpick halves. When using toothpicks, make sure the “eaters” are aware of this!
