Cookie: Napoleon’s Hat
The perfect cookie: napoleon’s hat recipe with a picture and simple step-by-step instructions.
dough
- 250 g Sifted flour
- 1 tsp Baking powder
- 75 g Extra fine sugar
- 1 packet Vanilla sugar
- 1 Egg size M
- 125 g Butter at room temperature
filling
- 125 g Ground almonds
- 125 g Sifted powdered sugar
- 3 drops Bitter almond flavor
- 1 Egg white Gr. M.
for prayerful
- 1 Egg yolk
- 1 tbsp Milk
filling
- Heat the almonds, powdered sugar, bitter almond flavor and egg white in a saucepan over low heat, stirring constantly, until an even almond mixture is obtained. Let it cool down and then shape it into hazelnut-sized balls (approx. 130 pieces)
dough
- Mix the flour and baking powder and work with all the other dough ingredients to form a kneading dough. If the dough sticks, refrigerate it for a while.
- Roll out about 3mm thin on a floured work surface, cut out round cookies (diameter 4cm) and place an almond ball in the center of each cookie. Lift the edges of the dough and press it against the ball in 3 places so that a three-cornered corner is created (practice makes perfect … the last ones are then perfect) 😉
- Place the tricorn on a baking sheet lined with baking paper and brush with the egg yolks whisked with milk.
- Bake in a preheated oven at 160 ° C for about 10-15 minutes.
