Cookies with Lemon Curd
The perfect cookies with lemon curd recipe with a picture and simple step-by-step instructions.
for the filling:
- 50 g Food starch
- 1 pinch Salt
- 200 g Soft butter
- 70 g Sugar
- 1 tsp Lemon zest
- 1 tbsp Lemon juice
- 1 Pc. Large egg yolk
- 25 g Lemon curd
- Lemon curd
- Mix the butter, sugar and lemon zest until frothy. Stir in lemon juice, lemon curd and egg yolk. Mix the flour, cornstarch and salt and stir in as well. You should now have a sticky dough. Wrap the dough in foil and put it in the fridge for about 30 minutes.
- Roll walnut-sized balls weighing approx. 20 g from the dough. Best done with moistened palms. Place the balls on a baking sheet lined with baking paper and use a wooden spoon handle or the finder to make a recess in the center.
- Pour 1/2 teaspoon of lemon curd into the middle. Bake in a preheated oven at 180 degrees for about 20-25 minutes. The cookies should still be light at the top and lightly colored at the bottom. Put the baking paper on a wire rack to cool down.
