Cookies with white chocolate

Ingredients for 1 servings:

  • 125 g butter, soft
  • 125 g brown sugar
  • 1 egg(s)
  • 200 g flour
  • 2 tsp baking powder
  • 1 pinch of salt
  • 125 g white chocolate, coarsely chopped
  • 50 g Brazil nuts, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Line 2 baking sheets with parchment paper. Preheat oven to 190°C (top/bottom heat). Cream the butter and sugar in a large bowl until light and fluffy. Add the egg and beat well. Sift the flour into the fluffy mixture and knead everything into a soft dough. Stir in the chocolate and Brazil nuts. Using a teaspoon, place 24 small mounds of dough onto the prepared baking sheets, leaving enough space between the mounds, as they will spread during baking. Place the mounds of dough in the preheated oven and bake for 10-12 minutes until golden brown. Place the finished cookies on a wire rack and let cool. Variations: The white chocolate can be replaced with milk or dark chocolate, if desired.
