Corn on the cob with lime butter

Ingredients for 4 servings:

  • 1 liter of milk
  • 1 tsp sugar
  • 4 corn cobs
  • 500 ml water
  • ½ lime(s), untreated
  • 1 red chili pepper(s)
  • 40 g butter, room temperature
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the milk, water, and sugar in a large saucepan. Cook the cleaned corn cobs for 20 minutes over medium heat. Remove from the milk and drain well. For the butter, thinly peel the lime with a vegetable peeler and finely chop the zest. Halve the chili pepper, remove the seeds, and finely chop. Mix the butter with the lime zest, chili pepper, and a little salt. Grill the corn cobs for 5-8 minutes. Remove from the grill and serve with 1/4 of the lime butter on each cob. Tip: Add salt to the corn cobs at the end, otherwise the kernels will become hard.
